Kevin Davis appeared in 12 games for the Pistol Shrimp during the 2022 season, striking out 40 batters with a 3.38 ERA and helping the Pistol Shrimp finish 20-11, the league's second-best first-half record.

In the second half of the 2022 summer, Davis signed with the Frontier League's Evansville Otters, throwing 17.1 innings with 34 strikeouts and a 2.08 ERA. He resigned with Evansville in 2023 and was lights out in 41 games, pitching 50 innings with 78 strikeouts and a 1.98 ERA.

Davis spent 2024 in the Mexican League, posting a 6.53 ERA with 46 strikeouts across 40.0 innings. The Chicago White Sox signed him to a minor league contract in May 2025 and assigned him to their Arizona Complex team.
